Three mountains, three peaks
Legend has it that this fluffy delight has been around since the 17th century. And by none other than Salome Alt, the mistress of Archbishop Wolf Dietrich. This connection resulted in 16 children and the laying of the foundation stone for the earliest buildings of Mirabell Palace.
The Salzburger Nockerl became a sugar-sweet hit thanks to the operetta “Saison in Salzburg”, which was also filmed in the 1960s under the title of the same name. The refrain of the waltz “Salzburger Nockerl” is what remains: “Salzburger Nockerl, Salzburger Nockerl, sweet as love and tender as a kiss”.
The three peaks of the Salzburger Nockerl are intended to symbolize Salzburg’s three local mountains: Mönchsberg, Kapuzinerberg and Gaisberg. Our tip: Enjoy a delicious dessert in the IMLAUER Sky, where you have a wonderful view of all three local mountains.


Do it yourself
Why not try Salzburger Nockerl at home? Our kitchen team has put together the recipe for you.
Ingredients:
5 eggs
3 tbsp granulated sugar
1 tbsp vanilla sugar
1 tbsp flour
Separate the yolks from the whites of all the eggs and place three yolks separately in a small bowl. The remaining two yolks are not needed.
Beat the egg whites until frothy, add the granulated sugar and vanilla sugar and beat until very stiff.
3 Only briefly mix in the egg yolks and flour, otherwise the beaten egg whites will collapse again.
Smooth out the mixture, form dumplings with a pastry cutter and place in the tin coated with oil and sprinkled with sugar and bake in a preheated oven at 180° for approx. 20 minutes until golden brown.
Then sprinkle the Salzburger dumplings with powdered sugar and serve quickly (while still hot).

With the opening of the
Mirabell Coffee Bar
2020, we have given the Salzburger Nockerl a new form. Since then, these have been available as single portions to take away. Salzburger Nockerl to-go can be conveniently taken to the office or on the go.
You can also bake the Salzburger Nockerl yourself at home. Simply place in the oven for 7 minutes and you have a wonderful dessert for a great meal with the family. The baking instructions included!
