GREAT PLEASURE IN THE OLD TOWN OF SALZBURG

The Siemens Fest>game>nights and the IMLAUER restaurant on Kapitelplatz attract thousands of visitors to Salzburg’s old town every year. From July 23 to August 28, 2022, you can once again experience the most beautiful productions from past years of the Salzburg Festival on a big screen while enjoying delicious dishes at the IMLAUER restaurant on Kapitelplatz.

Junior chef Thomas Imlauer gives an insight into the special features and challenges of the summer open-air restaurant.

The IMLAUER restaurant on Kapitelplatz has been open during the festival season for 21 years now. What is special about this restaurant for you?

I have always been fascinated by the relaxed atmosphere in the middle of this dreamlike setting. Our guests also appreciate this and spend wonderful summer evenings here with artistic and culinary delights. It is unique that everyone can spend a special festival evening in the open air with the most beautiful productions of the Salzburg Festival and of course our delicious menus.

What culinary delights can our visitors expect this year?

First of all, the usual high quality of IMLAUER catering. This is very important to us, because otherwise this restaurant would not be feasible for us. This year we are serving our guests a varied 2-course menu with aperitif, starter and main course. There is always a choice of three dishes for the main course, so that meat lovers and vegetarians alike will get their money’s worth. As always, seasonal and regional products are important to us. For example, there will be a char from the renowned fish specialist Grüll from Grödig.

This year we will also be opening our bistro again. There, visitors to the Siemens Fest>Spiel>Nächte can enjoy snacks or “just” a cool drink – with free seating or to take away

What are the biggest challenges for an open-air restaurant?

For us, the restaurant on Kapitelplatz is like a daily catering service outside the home. Logistics are just as important as perfect preparation for service and cuisine. However, the weather remains one of the biggest challenges. A sudden downpour or a summer thunderstorm are not unusual in Salzburg, so we have to react quickly. Sometimes we serve a mulled wine instead of an aperitif J

Where do you like to relax after a busy summer at the festival?

After the end of the festival, I’m looking forward to a few quiet days with my family in Pinzgau. Saalfelden, my father’s birthplace, is a wonderful place to relax. And of course I love spending time with my father at our wellness & golf resort in Styria, the IMLAUER Hotel Schloss Pichlarn. We then play a round of golf there and enjoy the magnificent scenery.
