THE PLACE TO ENJOY

CHEF MANUEL STOCK AT THE MIRABELL BRASSERIE IN IMLAU

Since May 2026, the IMLAUER Brasserie Mirabell has been enriching Salzburg’s culinary scene. It offers refined Austrian-Mediterranean cuisine featuring reimagined French dishes and Austrian classics.

Manuel Stock is the executive chef at the IMLAUER Brasserie Mirabell and the creative force behind the new culinary concept. Together with his team, he has managed to delight Salzburg residents and guests from around the world within just a few months.

Let Executive Chef Manuel Stock
and his team treat you to a culinary experience.

An IMLAUER Success Story

In 2009, Manuel Stock began his culinary apprenticeship at the IMLAUER Hotel Pitter. He then went on to work at other establishments and in other kitchens to gain experience—before finally returning to the “IMLAUER family.”

Today, Manuel Stock is the executive chef of our IMLAUER Brasserie Mirabell, which will open in May 2026. Those who know him appreciate his demeanor: calm, thoughtful, and confident. And he has a deep love for good food and the art of cooking.

That’s exactly what his cuisine is like. Austrian classics meet French brasserie cuisine and Mediterranean influences. Familiar, but never boring. Classic, yet with his own unique twists.

Creativity & Teamwork

The dishes on our menu are created by Manuel—for example, the special “Sot-l’y-laisse à la Coq au Vin.” We also like to keep things a bit more surprising and creative with our daily changing lunch special.

We’re especially pleased that his ideas are well-received: Falstaff recently awarded the IMLAUER Brasserie Mirabell 2 forks and 88 points —with an impressive 45 out of 50 points for the cuisine.

For Manuel, however, it’s never just “his cuisine.” New dishes are discussed, tested, and refined as a team. Because for him, behind every outstanding dish stands his amazing team.
