History Meets Delight
For more than 25 years, the Imlauer family has been a prominent presence in the Austrian hotel and restaurant industry. From the historic IMLAUER Hotel Pitter Salzburg to the luxurious 5-star spa & golf resort IMLAUER Hotel Schloss Pichlarn in Styria, they have always followed the same philosophy: breathing new life into historic buildings and allowing guests to experience their unique history.
In 2019, the hotel on Mirabellplatz was taken over—a historic building originally constructed in 1653 on behalf of the Prince-Archbishop of Salzburg, Paris Lodron. With great sensitivity and respect for the historic structure, the entrance area, the lobby, and most of the rooms were extensively renovated and now shine as IMLAUER Palais Mirabellt.
The IMLAUER Brasserie Mirabell was also created as part of this renovation. Here, contemporary brasserie culture blends with the charm of centuries past. Historical elements such as a 17th-century column and the impressive vaulted ceiling tell the story of the building’s long history and, together with the modern interior, create a unique atmosphere.
French brasserie culture with an Austrian twist
The cuisine at the IMLAUER Brasserie Mirabell combines the lightness and sophistication of French brasserie culture with high-quality regional ingredients and Austrian hospitality. Classic dishes are given a contemporary twist and prepared with great attention to detail.
The menu features French brasserie classics as well as favorite Austrian dishes. From fine beef tartare, bouillabaisse, and fresh fish specialties to a perfectly prepared entrecôte and the original Viennese veal schnitzel, the culinary spectrum spans from Paris to Salzburg.
Vegetarian and vegan dishes also feature prominently on the menu. Truffle pasta with Comté cheese, braised artichokes, and seasonal vegetable dishes demonstrate just how versatile and delicious modern brasserie cuisine can be.
The sweet finale features classic desserts such as crème brûlée, chocolate mousse, or the famous Salzburger Nockerl—a tribute to the city of Salzburg and its culinary traditions.

The IMLAUER Brasserie Mirabell is open daily from 11:30 a.m. to 11:30 p.m. and is here to serve you throughout the day. For an enjoyable business lunch, we offer a varied lunch menu Monday through Friday in addition to our regular menu. Freshly prepared dishes and attentive service make your lunch break a culinary highlight in the heart of Salzburg.
In the afternoon, a smaller menu featuring a selection of dishes invites you to linger. You can also enjoy homemade desserts, fine specialty coffees, and a selection of non-alcoholic and alcoholic beverages—perfect for a relaxing break between appointments or a stroll through the city.
When the historic vaulted ceilings are bathed in atmospheric lighting in the evening, the IMLAUER Brasserie Mirabell reveals its unique charm. Enjoy fine cuisine and select wines in a relaxed atmosphere.
