ROASTED CHANTERELLES WITH ORGANIC EGG FROM THE PICHLARN ESTATE

It will soon be time again for delicious mushrooms from local forests. Sous-Chef Mario Ilsinger has put together a delicious dish with chanterelles for you that you can cook quickly and easily at home.

We have organic eggs from our own chickens on the

Pichlarn estate

used. You can also take our organic eggs home with you during your next stay at the IMLAUER Hotel Schloss Pichlarn in a practical egg carton.

Ingredients

for 4 persons

800 g chanterelles
2 pieces of onion
2 tablespoons chives
60 g butter
6 organic eggs
1 pinch of rock salt to taste
1 pinch of ground pepper

This is how it’s done

Clean the chanterelles well.

Peel and finely chop the onions

Sauté the onions in hot butter in a large pan.

Slowly stir the mushrooms into the onions and fry. Season with rock salt and freshly ground pepper.

Whisk the eggs with the rock salt. Pour the mixture over the mushrooms and allow to set while stirring. Sprinkle with chopped chives.

Tip: Refine with truffle oil or fresh truffles.

What should you look out for when buying chanterelles?

When buying chanterelles, make sure that you choose small and firm mushrooms that smell fresh and good.

How can you tell if chanterelles are fresh?

Fresh chanterelles still have a forest scent and a slight dampness.

How are chanterelles cleaned correctly?

There are two options here. You can either clean the chanterelles with a small knife or a piece of kitchen roll and remove any impurities. Under no circumstances should they be washed or soaked in water.
